White Chocolate and Berry Muffins


Today i made White Chocolate and Berry Muffins.

It is a great recipe....really easy...see below for recipe!

I made them in the 24 mini muffin flexibake....they jsut slide out when cooked with no greasing required.

I have attached a photo so you can see how evenly they cook in the flexibake. Ireally like the idea that thereis no sifting of flour it's just mix it all together...except the berries they are just pushed into the top of each muffin.
Great size for kids and then for us adults....you can have two!!!!
RECIPE
2 Cups SR Flour
2/3 Cup Castor sugar
2/3 White Chocolate bits
1 Egg
3/4 Cup Buttermilk
125grms melted butte
1 tsp Vanilla Essense
Packet of frozen Raspberies
THE FUN!
Mix flour, sugar and chocolate together in bowl
Add egg, milk and melted butter and vanilla essense and stir
Add teaspoons full to the 24 mini muffin flexibake
Pres berries into top of muffin
Bake at 170c for about 17- 20 mintues

Some of us cook because we have to and some of us cook because we love it......i am a little of both of these.

I really love to cook, and i have to cook as i have a husband my three year old (fussy eater) and two teenage step children.....but sometimes by the end of the day the love of cooking leaves and the cant be bothered mother pops in for dinner.

Last September i joined a company that sells cookware.....i joined for two reasons.....the first was a financial one....we needed more money coming into the household with mortgage rates going up and up but the second was i had found quality cookware that actually made not only the cooking easier and better but the cleaning up after was heaps easier.

I cant believe how non stick the Como advanced ware is.

I had never EVER owned anything decent in my kitchen before and i used to think it was my very ordinary stove top and oven that wrecked the food but i now know that with better cookware it really doesn't matter what your oven is like.


Today i am going to a friends son's first birthday party so i thought i would make some chocolate teddy bears.

It is sort of a different version of chocolate crackles but with coconut...(reminds me of those coconut roughs you used to be able to buy.....maybe you can still get them??)
